For years we have been inspired by the possibility of being able to transport our coffees across the ocean in a more sustainable manner. When we heard about the projects from Belco to transport their coffees from Brazil and Colombia by sail we were so happy that we could logistically start moving in this direction and here we have it, a beautiful coffee with a lesser carbon footprint!
This coffee is a wonderfully bright, citric red caturra with some deeper bassy chocolatey notes. We love this coffee as an espresso black or with milk because of its silky body with that sparkling acidity.
Since taking over the farm in 2019, Leona has made a commitment to a more sustainable approach to farming with a larger emphasis on organic practices, only using when necessary.
This project is a solid example of a commitment to the planet and putting it into action, with a direction towards sustainable farming and transport. Creating a healthier link from seed-cup.
About the processing: The cherries are pulped and then fermented in water, where microbial fermentation will breakdown the mucilage. They are then washed with water to remove the remaining mucilage and dried to 11% on cement patios which are stirred regularly to ensure even drying.
