Cajamarca is an area of rich environmental diversity, from the Andean mountains to high altitude forests. It is an area renowned for exceptional agricultural products- especially the coffee!

However, Cajamarca is an area of high humidity, which makes it difficult to dry coffees as this humidity can prevent the coffee from drying correctly. Norvil decided to take a large risk this year by producing naturals and it certainly paid off as we are super happy with the resulting cup.

About the processing: The coffee is fermented for 45 hours in closed bags. It is then dried for 18 days under the sun but put back into tents at night.

Fun fact: This natural is so clean that many people have been confusing it for a washed!

About the roast: This coffee is a true omni-roast, we developed it enough to ensure sweetness in the cup and bold enough flavours to stand with milk. Whilst maintaining the delicate nature of the coffee for a nice clean filter brew.

We are super proud of this beautiful, complex natural displaying the rich terroir of Cajamarca. This coffee is a perfect bright cup with different levels of complexity that will change drastically depending on your extraction.
