This coffee is purchased direct trade from the Barbosa family via their European branch – conveniently also located in Portugal. The Barbosa coffees are our longest relationship and we plan to continue working with them for many years to come. The cups from Barbosa are always incredible and honestly it is hard to choose the right coffee from them as they all taste so great.

However, this year we chose a new coffee from Imaculada Barbosa and her female lead team - with a lot from the Raoní farms. With a SCA score of an incredible 88 points, this cup is truly astonishing, with hints of that typical expression of a Brazilian coffee with deep bassy flavour with these beautiful high clear notes of tropical fruits and fantastic sweetness.

About the processing: When we asked Savio Barbosa, our friend here in Portugal about the processing of this coffee we were amazed by the depth of information and incredible traceability of the lot that we received.

The cherries selected for this lot were taken from the mid-upper sections of the tree and from the skirts of the plant which is optimal for natural processed coffees. The cherries were mechanically selected on August 18th2024. Then at 8pm of this day they were placed into plastic barrels where they were left to ferment until 6pm on the 21st of August. The beans were then transported by tractor from Santa Maria Farm to Cachoeira farm for the drying process. The drying process was done over 19 days, Savio told us that he has been a part of the team drying this coffee in previous years. He told us the coffee is meticulously spread to layers no more than 5cm thick and turned every 3 hours and covered at night.

About the roast: We roasted this coffee with our omni roast approach, we developed the coffee with a 9%DTR. We wanted to emphasise the incredible sweetness and rich mouthfeel of the coffee whilst maintaining the delicate fruity components.
