This is our first washed Ethiopian coffee at von&vonnie which seems strange as it is our favourite process/origin combo. This is because we are so fussy about what we want from these coffees – we have very high expectations. We tried many but it wasn’t until this coffee from Guji that we found exactly what we wanted.
We purchased this coffee from Wete Ambela Coffee via Typica which allows the producers to benefit from eased ECX regulations allowing them to get more money for the coffee they produce. The project and farm has an incredible emphasis on education programs with the Mekuria farm being filled with children in classrooms, creating a great living environment for the local smallholders.
This coffee is so rich in bright florality and tea like flavours with an incredible peachiness that rises to prevalence as the coffee cools.
About the processing: The coffee is a collection from a collective of farmers (15 permanent and 100 seasonal workers) in the area that on average bring 100kg of cherry each, the farmers are paid on delivery and receive bonuses for quality. This coffee is a super clean washed coffee using the local river.
About the roast: This is definitely roasted on our lighter side, with an emphasis on filter extraction, we wanted to ensure we can maintain on the volatile aromatic floral compounds to not lose this coffees characteristic. However, thanks to the halogens of the stronghold we are able to ensure that the inside is not underdeveloped despite just a 7%DTR.
