One of the three incredibly exciting coffees from Pergamineros this year, this lot is filled with character in terms of heavy body, incredible sweetness, and a very round profile. This coffee is one that is really perfect for that everyday morning coffee, working beautifully as espresso with or without milk but also as a filter coffee.
About Pergamineros
In the Sierra Sul mountains of Oaxaca, Mexico, a group of small holder producers referring to themselves as Pergamineros. This name is a reflection of their situation, due to their geographic isolation, selling their coffee in conventional manners is not possible. Traditionally in areas such as this and many others, coffee is collected as cherries from the tree and then sold within one day of picking, otherwise the cherries can go bad. Due to the isolation, this group can not sell in this manner and instead have had to process their coffee themselves before selling it.
In 2025, our importing partner Semilla began working with producers in Loxicha, recognising the potential of these coffees even with relatively simple processing methods. Since then, a growing number of farmers have begun exploring more selective picking, fermentation and extended drying, with Semilla providing cupping feedback and guidance to help each producer develop their coffee further.
This collaboration is very new, and also very exciting, the opportunity to work with a group that is already doing so much amazing work such as: agro-forestry systems(shade grown coffees!), organic farming practices, using bokashi fertilisers as the primary input, processing their own coffee, it’s just a very exciting project to be able to be showcasing.
About the processing: Handpicked ripened coffee cherries are picked and processed as washed coffees by the Pergamineros group. Cherries floated and then dry fermented for 12 hours.
About the Roast: We developed this coffee a little more than the other two lots from this group to give the coffee a bit more body and really emphasise that characteristic sweetness. This roast profile is medium-light.
