One of three incredible coffees from the Pergamineros group in coffee, and certainly an incredible one. This coffee has such wonderful delicate notes, with a tea-like body yet holding some nice gentle citrus notes. This isolated Typica comes from Esperanza, an incredibly enthusiastic producer from the San Agustin Loxicha. She is a third generation coffee grower and has been managing her plots with her husband Silvano since 2009, continuing their traditions of coffee growing.

Currently, they are producing just 10 exportable bags of coffee per year, but they plan to continue to push their land in a respectful way, using organic agroforestry approach, with the aim to produce 50 bags in the future.

About Pergamineros

In the Sierra Sul mountains of Oaxaca, Mexico, a group of small holder producers referring to themselves as Pergamineros. This name is a reflection of their situation, due to their geographic isolation, selling their coffee in conventional manners is not possible. Traditionally in areas such as this and many others, coffee is collected as cherries from the tree and then sold within one day of picking, otherwise the cherries can go bad. Due to the isolation, this group can not sell in this manner and instead have had to process their coffee themselves before selling it.

In 2025, our importing partner Semilla began working with producers in Loxicha, recognising the potential of these coffees even with relatively simple processing methods. Since then, a growing number of farmers have begun exploring more selective picking, fermentation and extended drying, with Semilla providing cupping feedback and guidance to help each producer develop their coffee further.

This collaboration is very new, and also very exciting, the opportunity to work with a group that is already doing so much amazing work such as: agro-forestry systems(shade grown coffees!), organic farming practices, using bokashi fertilisers as the primary input, processing their own coffee, it’s just a very exciting project to be able to be showcasing.

About the processing: Handpicked ripened coffee cherries are picked and processed as washed coffees by the Pergamineros group. More details coming soon.

About the Roast: The three coffees from this group require different roasting styles to really emphasise the profile in the way we would like to, with this microlot typica, we noticed that the coffee had a lot of elegance and sophistication that needed to be highlighted, to do so we roasted this coffee very light. Roast Level: Very-Light (103 Agtron)
