Puno is the origin of one of our all time favourites, Cruz Pata, but this year we decided to ask our friends at Cultivar to help us find another coffee from this region to complement our lineup. This is our first year with this coffee and we are so happy to have it. The profile of this coffee maintains that citrus, sweet structure of the Cruz Pata, typical of this region. However, we find that the Soncco has a much louder florality to it, singing like a perfume in the cup.
Armando is now in his 50’s and has been producing coffee since childhood, his approach pays homage to tradition, avoiding experimentation, with controlled processing to get a perfect clean cup, leading to year on year consistency. This coffee has become a standout in our lineup and we are happy to have it.The area of Puno in Sandia holds a rich history dedicated to growing these high quality bourbons, the seeds for these bourbons were first planted in the 1980’s as a part of a United Nations initiative (see Alternative Development In The Andean Area, UNDCP, 2001) and to this day this area continues to excel in these washed coDees.
About the processing: Selective hand-picked harvesting, with depulping and a c. 25 hour fermentation in an open tank. With drying of 15 days on raised beds with five hours of sun exposure per day.
About the Roast: We have a deep respect for the deep profile and florality in these Puno bourbons, and always want to ensure that they stay present in the cup. Therefore, we roast these coffees lightly to ensure these maintain present, in this particular coffee we end up with a fantastic perfumed bouquet. Roast Level: Very Light
